Toast Topping

It's such a cliché of a photo, like instagram puked on my kitchen counter, but thats what 2015 is all about; the internet throwing up on individuals and everyone rolling around and relishing in it. Mmm delishy internet puke.
But honestly, this is SO DAMN FULL OF NUTRIENTS, avocados and tomatoes have been branded as "super foods", and if you're reading my blog, I'm sure you've read about super foods plenty of times before on plenty other internet spots
BAM
BAM
BAM
Just in case you hadn't.
So wholewheat toast (duh) then I'm pretty generous with (soy) butter. Chopped tomato and half an avocado, nutritional yeast, salt n' pepper. yum, easy, healthy, most importantly minimum washing up.

Vegan peanut butter cups

Yum. Keep 'em in the freezer to keep the "chocolate" crunchy.

2:1:1
coconut oil : cacao powder : nut butter
and a massive dollop of agave syrup (2 tbsp)

Softly melt the coconut oil (I've also seen variations where people have used cacao butter). I tend to boil water in a small sauce pan and measure out my coconut oil in a glass pyrex jug, the jug being only a little smaller than the saucepan so I can melt the oil like you would chocolate, by putting the whole jug in the water in the saucepan.

Once that has all melted slowly add in the cacao powder and stir the whole time (you can take the jug out of the water, the oil will stay melted for a while. Then add the agave.

Pour half the mix into cases, freeze to set. After 10 minutes, blob some nut butter in the centre and flatten out then cover the butter with the rest of the mixture. Freeze for a further 10 minutes.

Enjoy!

I hope soon to add these on top of some of Mums vegan brownies... more to follow soon.

Welcome to my vegan adventure..

This is a fabulous follow on spot from where I normally post on tumblr as www.nayliensveganadventure.tumblr.com. I wanted to make a place where I can keep a record of my plant based diet and memories of how veganism has inspired me, so when I get hungry to breaking point I have a quick reference of free from animal based product foods I've made before. I only really make easy stuff too so enjoy! I'm very new to all this blogging, (as well as veganism and decaf, soy lattes; the shame of it all.) and www.tumblr.com didn't really seem the place for lengthy rambles and recipes.

From time to time expect other, miscellaneous subjects under tips & tricks, hair & beauty and what ever else comes to mind.

I was a vegan virgin up until very recently, but check that out here.
